Gluten-free spinach & protein pancakes with coconut cream

These pancakes are so EASY and you will most likely have everything on hand to make them. You only need eggs and bananas! The ration is 2 eggs to 1 banana then you can add any additions you wish to make them your own. I make these for my toddler and she loves them. They are super healthy and we add some green powder to increase our daily dose of greens for the day. I added in some fresh English peas to make a smiley face for this recipe, but feel free to get creative and add chocolate chips for a sweet version or add some roasted corn and chives to make a savory version.


2 eggs

1 banana

1 scoop green powder  

coconut oil

syrup (optional)

coconut cream from the can (optional)

Step 1

  1. add banana, eggs, green powder to a blender and blend.
  2. cook your pancakes with some coconut oil you so get that crisp edge, add any additions you want at this point

Step 3

3. Serve up your pancakes! I like to add a scoop of coconut cream and maple syrup for the sweet ones. If I am making savory ones I will add sour cream.  Enjoy your healthy breakfast!
